To prepare Dover Sole with Panko Crust, start by combining the panko breadcrumbs, Parmesan cheese, oregano, garlic powder, paprika, salt, and pepper in a shallow dish.
Dip each Dover Sole fillet into the mixture, pressing the crumbs into both sides of the fillet.
Heat the olive oil and butter in a large skillet over medium-high heat.
Place the fillets in the skillet and cook for 3-4 minutes per side, or until golden brown and cooked through.
