Preheat the oven to 350°F (175°C).
In a food processor, combine the basil, garlic, pine nuts, Parmesan cheese, extra-virgin olive oil, lemon juice, and sea salt. Blend until smooth.
Place the Dover Sole fillets on a baking sheet and brush with olive oil. Season with salt and pepper.
Spread the pesto over the top of the fillets.
Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through.
