To make Fish Stew, begin by heating the olive oil in a large pot over medium-high heat.
Once the oil is hot, add the onion, garlic, bell pepper, celery, and carrots. Cook for 5-7 minutes, stirring occasionally until the vegetables are softened.
Next, add the diced tomatoes, white wine, oregano, thyme, paprika, and bay leaf. Stir to combine and let the mixture simmer for 5 minutes.
Add the fish stock and bring the mixture to a boil.
Once boiling, reduce the heat to low and add the fish fillets. Cover the pot and let the stew simmer for 10-15 minutes or until the fish is cooked through.
Finally, season the stew with salt and pepper to taste and stir in the chopped parsley.
Serve the stew hot with your favourite sides, and enjoy!
