    Ingredients

    • 2 barramundi fillets
    • 2 tablespoons olive oil
    • 2 ripe mangos
    • diced 1/2 red onion
    • diced 1/2 jalapeno pepper, seeded and minced
    • 2 tablespoons fresh lime juice
    • 2 tablespoons chopped fresh cilantro
    • Salt and pepper, to taste 

    Method

    • Preheat the grill to medium-high heat.

    • In a medium bowl, combine the diced mango, red onion, jalapeno pepper, lime juice, and cilantro. Mix until everything is combined and season with salt and pepper, to taste.

    • Brush the barramundi fillets with olive oil and season with salt and pepper, to taste.

    • Place the fillets on the preheated grill and cook for 4-5 minutes per side, or until the fish is cooked through.

    • Serve the grilled barramundi with the mango salsa. Enjoy!
