    Grilled Eel is a traditional Japanese dish that has been enjoyed for centuries. It is a simple yet flavorful dish made with eel, salt, soy sauce, mirin, sake, ginger, garlic, sugar, and vegetable oil. The eel is marinated in a sweet and savoury sauce and then perfectly grilled. This dish is easy to prepare and can be served as an appetizer or main course. It is also a great way to enjoy the unique flavour of eel.

    Ingredients

    • Eel
    • Salt
    • Soy sauce
    • Mirin (sweet rice wine)
    • Sake (rice wine)
    • Ginger
    • Garlic
    • Sugar
    • Vegetable oil

    Method

    • Grilled Eel: Step-by-Step Method
    • Pat eel fillets dry with a clean cloth or paper towel
    • Sprinkle salt lightly on both sides of eel and set aside
    • In a small saucepan, combine soy sauce, mirin, sake, sugar, grated garlic, and grated ginger
    • Heat sauce mixture gently, stirring, until sugar is dissolved and sauce thickens slightly
    • Strain sauce to remove garlic and ginger solids, reserving liquid
    • Brush eel fillets with a thin coat of vegetable oil on both sides
    • Preheat grill to medium-high
    • Place eel skin side down on grill
    • Grill eel for 2–3 minutes, then brush with sauce
    • Flip eel carefully, brush top with more sauce, and grill another 2–3 minutes
    • Continue grilling, brushing with sauce and flipping as needed, until eel is glazed and cooked through
    • Remove eel from grill and let rest for 1 minute
    • Slice eel into bite-sized pieces
    • Arrange eel slices neatly on a plate, drizzle with a little extra sauce
    • Garnish with a light dusting of grated ginger if desired
    • Serve immediately, optionally with steamed rice or thinly sliced scallions
