    Ingredients

    • 1 pound of large shrimp, peeled and deveined
    • 3 tablespoons olive oil
    • 3 cloves garlic, minced
    • 1/4 teaspoon red pepper flakes
    • 1/4 cup dry white wine
    • 2 tablespoons freshly squeezed lemon juice
    • 2 tablespoons chopped fresh parsley
    • Salt and freshly ground black pepper, to taste
    • 2 tablespoons unsalted butter, melted
    • Lemon wedges, for garnish

    Method

    • Step-by-Step Method for Grilled Shrimp Scampi
    • Preheat your grill to medium-high heat
    • Rinse shrimp under cold running water
    • Pat shrimp dry with paper towels
    • Place shrimp in a mixing bowl
    • Add 2 tablespoons olive oil to shrimp
    • Add minced garlic, red pepper flakes, salt, and black pepper to shrimp
    • Toss shrimp thoroughly to coat evenly
    • Thread shrimp onto metal or soaked wooden skewers
    • In a small bowl, whisk together white wine, lemon juice, remaining 1 tablespoon olive oil, and melted butter
    • Set aside this mixture for basting
    • Chop fresh parsley and set aside
    • Grill shrimp skewers for 2-3 minutes per side or until opaque and just cooked through
    • Brush shrimp with wine-lemon-butter mixture during the last minute of grilling on each side
    • Remove shrimp from grill and let rest for 1 minute
    • Transfer shrimp to a serving platter
    • Drizzle any remaining wine-lemon-butter mixture over shrimp
    • Sprinkle chopped parsley evenly over shrimp
    • Garnish with lemon wedges on the side
    • Serve immediately
