    • 2 tablespoons olive oil
    • 2 tablespoons butter
    • 2 cloves garlic, minced
    • Juice of 1 lemon
    • Salt and pepper to taste
    • Fresh herbs such as parsley, thyme, or oregano (optional)

    • How to Make Grilled Yellowfin Sole with Lemon
    • Rinse yellowfin sole fillets under cold water and gently pat dry with paper towels
    • Place fillets on a plate and lightly season both sides with salt and pepper
    • In a small bowl, combine olive oil and minced garlic
    • Brush both sides of each fillet with the olive oil and garlic mixture
    • Juice the lemon, reserving both the juice and a few thin slices for garnish
    • Preheat your grill or grill pan over medium-high heat
    • While the grill preheats, chop fresh herbs if using
    • Place yellowfin sole fillets on the preheated grill
    • Grill fillets for 2-3 minutes on the first side, until grill marks appear and fish easily loosens
    • Carefully flip fillets using a fish spatula; grill 1-2 minutes more or until just cooked through
    • While fish grills, melt butter in a small saucepan or microwave-safe dish
    • Stir reserved lemon juice into the melted butter
    • Remove grilled fillets from the grill and immediately drizzle with lemon butter
    • Garnish with chopped herbs and lemon slices, if desired
    • Serve promptly, paired with light sides such as steamed vegetables or a simple salad
