    Ingredients

    • 4 haddock fillets
    • 2 tablespoons olive oil
    • 4 slices bacon, diced
    • 2 cloves garlic, minced
    • 2 tablespoons butter
    • 2 cups baby spinach
    • 2 tablespoons lemon juice
    • Salt and pepper, to taste
    • 2 tablespoons chopped fresh parsley

    Method

    • Step-by-Step Method for Haddock with Spinach and Bacon
    • Preheat oven to 180°C (350°F), if finishing fish in oven is desired
    • Pat haddock fillets dry with paper towels
    • Season haddock fillets lightly with salt and pepper on both sides
    • Heat 1 tablespoon olive oil in large non-stick skillet over medium heat
    • Add diced bacon to skillet; cook until crisp, about 4-5 minutes; transfer bacon to plate, reserving bacon fat in pan
    • In the same pan, add minced garlic and sauté 30 seconds until fragrant
    • Add baby spinach to pan; stir gently until just wilted, about 1-2 minutes
    • Transfer spinach and garlic mixture to plate, keep warm
    • Wipe pan clean and return to medium-high heat
    • Add remaining 1 tablespoon olive oil and half the butter to skillet
    • Place haddock fillets into skillet, skin side (if any) down; cook without moving 2-3 minutes until golden
    • Gently flip fillets; add remaining butter and cook another 2-3 minutes until opaque and just cooked through
    • (Optional) Transfer skillet to preheated oven for 3-4 minutes if fillets are thick
    • Remove haddock from pan, let rest for 1-2 minutes
    • Return spinach, garlic, and bacon to pan, toss briefly to heat through
    • Drizzle lemon juice over the spinach and bacon mixture
    • Plate spinach and bacon mixture as a bed on serving plates
    • Top with cooked haddock fillets
    • Spoon pan juices over fillets
    • Sprinkle with chopped fresh parsley
    • Serve immediately, optionally with a lemon wedge on the side
