    Halibut with Coconut Curry Sauce is an easy-to-make dish packed with flavour. The dish is made with halibut fillets simmered in a flavorful coconut milk sauce spiced with cumin, coriander, turmeric, and cayenne pepper. The dish finishes with a squeeze of lime juice and a sprinkle of fresh cilantro for a delicious and satisfying meal.

    Ingredients

    • 1 lb halibut fillets
    • 1 tablespoon olive oil
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 1 teaspoon grated fresh ginger
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1/2 teaspoon ground turmeric
    • 1/4 teaspoon cayenne pepper
    • 1 (14-ounce) can coconut milk
    • 2 tablespoons freshly squeezed lime juice
    • 1/4 cup chopped fresh cilantro
    • Salt and freshly ground black pepper, to taste

    Method

    • To prepare Halibut with Coconut Curry Sauce, heat the olive oil in a large skillet over medium heat.
    • Add the onion, garlic, and sauté until the onion is translucent, about 5 minutes.
    • Add the ginger, cumin, coriander, turmeric, and cayenne pepper and cook for 1 minute.
    • Add the coconut milk, bring the mixture to a simmer, and reduce the heat to low.
    • Add the halibut fillets to the skillet and simmer for 10 minutes or until the fish is cooked.
    • Remove the skillet from the heat and stir in the lime juice and cilantro. Season with salt and pepper to taste. 
    • Serve the halibut with the sauce, and enjoy.
