    • 4 (6-ounce) halibut fillets
    • 1/4 cup prepared pesto
    • 2 tablespoons olive oil
    • 1/2 teaspoon kosher salt
    • 1/4 teaspoon freshly ground black pepper
    • 2 large tomatoes, sliced
    • 2 tablespoons chopped fresh basil
    • 2 tablespoons freshly grated Parmesan cheese

    Method

    • Step-by-step Method for Halibut with Pesto and Tomatoes
    • Preheat oven to 400°F (200°C).
    • Pat halibut fillets dry with a paper towel and place them on a lightly oiled baking tray.
    • Season fillets evenly with kosher salt and freshly ground black pepper on both sides.
    • Slice the tomatoes into medium rounds.
    • Arrange tomato slices over and around the halibut fillets on the baking tray.
    • Drizzle 2 tablespoons olive oil evenly over the fish and tomatoes.
    • Spoon 1 tablespoon of prepared pesto onto each halibut fillet, spreading gently to cover the top surface.
    • Sprinkle freshly grated Parmesan cheese evenly across all fillets.
    • Place tray in preheated oven and bake for 12-15 minutes, or until halibut is opaque and flakes easily with a fork.
    • While fish is baking, finely chop fresh basil leaves.
    • Once baking is complete, remove tray from oven and let fish rest for 2 minutes.
    • Plate each halibut fillet with some of the roasted tomatoes from the tray.
    • Garnish each fillet with a generous pinch of chopped fresh basil.
    • Serve immediately, pairing with a light side salad or steamed vegetables if desired.
    • For presentation, drizzle any pan juices lightly around each plate and add extra Parmesan if preferred.
