Begin by seasoning the halibut fillets with salt and pepper.
Heat the olive oil in a large skillet over medium heat.
Add the shallots and garlic, and sauté for 2-3 minutes.
Add the cumin and red pepper flakes, and cook for an additional minute.
Pour in the white wine and chicken broth, and bring the mixture to a boil. Reduce the heat to low and simmer for 5 minutes.
Add the lime juice and cilantro, and stir to combine.
Place the halibut fillets in the skillet and cook for 8-10 minutes, flipping once halfway through.
Once the halibut is cooked through, remove from the heat and stir in the butter.
