    • 1/2 pound herring fillets
    • 1/4 cup butter
    • 2 tablespoons all-purpose flour
    • 1/2 cup chicken broth
    • 1/4 cup white wine
    • 2 tablespoons lemon juice
    • 1/4 cup heavy cream
    • Salt and pepper to taste
    • Chopped fresh parsley for garnish (optional)

    • Pat herring fillets dry with paper towels and lightly season both sides with salt and pepper
    • In a small saucepan, melt butter over medium heat until foamy
    • Add flour to melted butter and whisk continuously to form a smooth roux, cooking for 1-2 minutes without letting it brown
    • Slowly whisk in chicken broth, ensuring there are no lumps, then add white wine and continue stirring until the mixture is smooth
    • Add lemon juice and simmer sauce for 1-2 minutes to blend flavors
    • Reduce heat to low, then gradually stir in heavy cream; heat gently until the sauce is warmed and slightly thickened
    • Meanwhile, optionally, cut herring fillets into serving portions if desired
    • Gently nestle herring fillets into the sauce, making sure they are mostly submerged
    • Cover and poach the fillets in the sauce over very low heat for about 8-10 minutes, or until the fish is just cooked through and flakes easily
    • Taste sauce and adjust seasoning with additional salt and pepper as needed
    • For serving, use a wide shallow plate; spoon sauce over the bottom, arrange herring pieces on top or to the side
    • Garnish with freshly chopped parsley (optional) for color and freshness
    • Serve immediately with crusty bread or steamed new potatoes as a side if desired
