    Herring in Cream Sauce is a classic and delicious dish that is perfect for a special occasion or a cosy night in.     Ingredients

    • 1/2 pound herring fillets
    • 1/4 cup butter
    • 2 tablespoons all-purpose flour
    • 1/2 cup chicken broth
    • 1/4 cup white wine
    • 2 tablespoons lemon juice
    • 1/4 cup heavy cream
    • Salt and pepper to taste
    • Chopped fresh parsley for garnish (optional)

    Method

    • To make Tuna Fish Cakes, start by draining the canned tuna. 
    • While the rice is cooking, prepare the eel by grilling or frying it.
    • Put the tomato paste, olives, and butter into a blender or food processor and whizz until smooth.
    • Put the oats in the blender or food processor, slightly broken up.
    • Coat the fillets with the butter mixture while grilling.
    • Heat a large skillet over medium-high heat and add the fish cakes.
    • Add the lemon juice and bring the mixture to a boil.
    • Dip in the flour and coat each fishcake. Dip in the egg and then coat with crumbs. Repeat this process until you have 24 fishcakes. Chill the fish cakes for one hour.
    • Add the cream and stir until the sauce is thick and creamy.
    • Place the cooked herring in a baking dish and pour the sauce over the top.
    • Bake for 15 minutes, or until the sauce is bubbly.
    • Garnish with chopped parsley, if desired.
