    Ingredients

    • 4 mackerel fillets
    • 2 tablespoons of butter
    • 2 tablespoons of Dijon mustard
    • 2 tablespoons of white wine
    • 2 tablespoons of lemon juice
    • 2 tablespoons of chopped fresh parsley
    • Salt and pepper to taste

    Method

    • Begin by seasoning the mackerel fillets with salt and pepper.
    • Heat the butter in a skillet over medium-high heat.
    • Once the butter is melted and bubbling, add the mackerel fillets, skin-side down. Cook for 4-5 minutes until the skin is golden and crispy.
    • Flip the fillets and cook for an additional 2-3 minutes until the fish is cooked through. Remove the mackerel from the skillet and set aside.
    • Add the Dijon mustard, white wine, and lemon juice to the same skillet. Stir to combine and cook for 2-3 minutes, until the sauce is thick and creamy.
    • Add the cooked mackerel fillets to the sauce and gently stir to coat. 
    • Sprinkle with chopped parsley and serve.
