    Ingredients

    • 2 mackerel fillets
    • 2 tablespoons olive oil
    • 2 cloves garlic, minced
    • 1 large tomato, diced
    • 1/4 cup fresh basil, chopped
    • Salt and pepper to taste

    Method

    • To begin, heat the olive oil in a large skillet over medium-high heat. 

    • Once the oil is hot, add the garlic and cook for one minute. 

    • Next, add the diced tomato and cook for an additional three minutes. 

    • Once the tomato is cooked, add the mackerel fillets and cook for five minutes, flipping once halfway through. 

    • Once the mackerel is cooked through, remove from heat and top with the chopped basil, salt, and pepper. Serve immediately.
