    Ingredients

    • 2 tablespoons olive oil
    • 1 onion, diced
    • 2 cloves garlic, minced
    • 2 tablespoons tomato paste
    • 1 teaspoon smoked paprika
    • 2 tablespoons white wine
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon dried thyme
    • 1/4 teaspoon red pepper flakes
    • 1 (15-ounce) can white beans, drained and rinsed
    • 1 pound monkfish fillet, cut into 1-inch cubes
    • 1/2 cup chicken broth
    • Salt and freshly ground black pepper
    • 1/4 cup chopped fresh parsley
    • 2 tablespoons freshly squeezed lemon juice
    • 2 tablespoons chopped fresh cilantro
    • 2 tablespoons prepared salsa
    • Lemon wedges, for serving

    Method

    • To prepare Monkfish with White Beans and Salsa, heat the olive oil in a large skillet over medium-high heat. 
    • Add the onion and garlic and cook until softened about 5 minutes. 
    • Then stir in the tomato paste, smoked paprika, white wine, oregano, thyme, and red pepper flakes. 
    • Add the white beans and monkfish until the fish is cooked, about 5 minutes. 
    • Finally, stir in the chicken broth, season with salt and pepper, and bring to a simmer. 
    • Serve the dish with a sprinkle of parsley, lemon juice, cilantro, salsa and a lemon wedge.
