Put the sardines in a very large bowl. Sprinkle sea salt over the sardines. Drizzle with oil. Toss to coat.
Let stand at room temperature for 1 hour. Meanwhile, preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
Place the sardines, back-side up, on the prepared baking sheet. Drizzle with a little of the juice from the bowl.
Bake for 10 minutes, or until the flesh has flakes easily with a fork. Note: Cooking time may vary depending on your oven.
Remove from oven. Sprinkle with ground pepper.
Serving Suggestions: Serve with lemon wedges and cumin as garnish.
