    Selecting sardines at the fish market is a good idea for a number of reasons. They’re nutritious and delicious! Sardines are a healthy meal because they're rich in vitamin B, omega-3s, calcium, and vitamin D.

    Ingredients

    • 2 pounds gutted and descaled whole sardines
    • 1/4 cup rock salt
    • 1 tablespoon olive oil
    • salt and ground pepper to taste
    • Garnishes: fresh lemon wedges and cumin

    Method

    • Put the sardines in a very large bowl. Sprinkle sea salt over the sardines. Drizzle with oil. Toss to coat.

    • Let stand at room temperature for 1 hour. Meanwhile, preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.

    • Place the sardines, back-side up, on the prepared baking sheet. Drizzle with a little of the juice from the bowl.

    • Bake for 10 minutes, or until the flesh has flakes easily with a fork. Note: Cooking time may vary depending on your oven.

    • Remove from oven. Sprinkle with ground pepper.

    • Serving Suggestions: Serve with lemon wedges and cumin as garnish.
