How to cook
- BBQ: 3–4 minutes per side over medium-high heat with sea salt and lemon.
- Pan-sear: 2–3 minutes per side in olive oil.
- Grill: 3 minutes per side under a hot grill.
- Baked with tomato: Portuguese-style at 200°C for 12–15 minutes.
- Cold: dressed with butter, lemon and herbs over new potatoes.
Pair with Vinho Verde, Albariño or chilled Manzanilla.
