    Ingredients

    • 2 pounds mussels
    • 2 tablespoons olive oil
    • 1 large onion, diced
    • 4 cloves garlic, minced
    • 1/2 teaspoon crushed red pepper flakes
    • 1 (14.5 ounce) can diced tomatoes
    • 1/4 cup white wine
    • 2 tablespoons chopped fresh parsley
    • Salt and freshly ground black pepper, to taste
    • 2 tablespoons butter

    Method

    • 1. Heat the olive oil in a large skillet over medium heat.

      2. Add the onion and garlic and cook for about 5 minutes, stirring occasionally.

    • 3. Add the crushed red pepper flakes, tomatoes, and white wine and simmer for about 10 minutes.

    • 4. Add the mussels, cover the skillet, and cook for 5 minutes, or until the mussels have opened.

    • 5. Remove the mussels from the skillet and set aside.

    • 6. Add the butter to the sauce and stir until melted.

    • 7. Return the mussels to the skillet and season with salt and pepper, to taste.

    • 8. Sprinkle with the chopped parsley and serve.
