To prepare the dish, start by heating a large skillet over medium-high heat.
Add the bacon and cook until it is crispy about 5 minutes.
Add the garlic and leeks and cook until the leeks are softened about 3 minutes.
Add the white wine and bring to a simmer.
Add the mussels and cover the pan. Cook until the mussels open, about 5 minutes. Discard any mussels that do not open.
Add the butter and parsley and season with salt and pepper to taste.
Serve with crusty bread or over a bed of rice.
