To make Mussels with Shallots and Parsley, heat the olive oil in a large pot over medium heat.
Add the shallots and garlic and sauté until they are softened and fragrant.
Add the mussels and white wine and stir to combine. Cover the pot and simmer for about 10 minutes, or until the mussels have opened.
Remove the lid and add the butter and parsley, stirring to combine.
Season with salt and pepper to taste. Serve immediately.
