    Ingredients

    • 1 large octopus, cleaned and cut into small pieces
    • 2 tablespoons olive oil
    • 1 onion, finely chopped
    • 1 celery stalk, finely chopped
    • 2 cloves garlic, minced
    • 2 tablespoons tomato paste
    • 1 teaspoon dried oregano
    • 1/2 teaspoon smoked paprika
    • 1/4 teaspoon red pepper flakes
    • 4 cups vegetable broth
    • 2 cups diced tomatoes
    • 1/4 cup chopped fresh parsley
    • Salt and freshly ground black pepper, to taste
    • Chopped fresh parsley, for garnish (optional)

    Method

    • 1. Begin by heating the olive oil in a large pot over medium heat.
    • 2. Add the onion, celery, and garlic and sauté until the vegetables are softened, about 5 minutes.
    • 3. Add the octopus and cook for an additional 5 minutes.
    • 4. Stir in the tomato paste, oregano, paprika, and red pepper flakes and cook for 2 minutes.
    • 5. Pour in the vegetable broth and diced tomatoes and bring the soup to a boil.
    • 6. Reduce the heat to low and simmer for 25 minutes, or until the octopus is cooked through.
    • 7. Season with salt and pepper to taste. 8. Serve the soup hot, garnished with fresh parsley. Enjoy!
