    Ingredients

    • Olive oil
    • Onion
    • Garlic
    • Red bell pepper
    • Short-grain rice
    • Smoked paprika
    • Saffron
    • Vegetable or chicken stock
    • Prawns
    • Mussels
    • Chorizo
    • Peas
    • Lemon wedges (for garnish)

    Method

    • 1. Heat the olive oil in a large pan or paella pan over medium heat.
    • 2. Add the onion and garlic and cook until softened.
    • 3. Add the red bell pepper and cook for a few minutes.
    • 4. Add the rice and stir to combine.
    • 5. Add the smoked paprika and saffron and stir to combine.
    • 6. Pour in the stock and bring to a simmer.
    • 7. Add the prawns, mussels, and chorizo and stir to combine.
    • 8. Cover the pan and cook for 20 minutes.
    • 9. Add the peas and cook for an additional 5 minutes.
    • 10. Remove from heat and let sit for 10 minutes.
    • 11. Serve with lemon wedges.
