Begin by seasoning the perch fillets with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat.
Once the oil is hot, add the perch fillets to the skillet and cook for 3-4 minutes per side or until the fish is golden brown and cooked through.
Once the fish is cooked, remove it from the skillet and set aside.
In the same skillet, add the minced garlic and cook for 1-2 minutes, or until fragrant.
Add the chopped parsley and stir to combine.
Return the perch fillets to the skillet and season with additional salt and pepper to taste.
Serve the perch fillets with lemon wedges, if desired.
