    • 2 salmon steaks, about 6oz each and 1/2 inch thick
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/2 teaspoon dried sage
    • 1 tablespoon unsalted butter
    • Freshly chopped parsley, for serving

    Method

    • Pat the salmon steaks dry on both sides with paper towels.
    • Season both sides of each steak evenly with salt, black pepper, and dried sage.
    • Preheat a non-stick or heavy-bottomed skillet over medium-high heat.
    • While the skillet heats, finely chop fresh parsley for garnish (set aside).
    • Once the pan is hot, add the unsalted butter and allow it to foam without browning.
    • Carefully place the salmon steaks into the skillet, presentation side down.
    • Cook without moving for 3-4 minutes, until the bottom is golden brown and the fish releases easily.
    • Flip the steaks gently and cook the second side for another 2-3 minutes for medium doneness.
    • Remove the salmon steaks from the pan and let them rest for 1-2 minutes.
