    • Pat perch fillets dry with paper towel and season both sides with salt and pepper.
    • Prepare two saucepans: one for fish, one for sauce (for efficiency).
    • In the first saucepan, melt 2 tablespoons butter over medium heat.
    • Place seasoned perch fillets in the pan and cook 2-3 minutes per side until golden and just cooked through; transfer to a warm plate, cover loosely.
    • Simultaneously, in the second saucepan, melt remaining butter (if any left in pan is not sufficient) over medium heat.
    • Add 2 tablespoons all-purpose flour to the butter, stir constantly to form a light roux, cooking for 1 minute.
    • Gradually whisk in 1 cup chicken broth to the roux, stirring continuously until smooth and slightly thickened.
    • Lower heat, stir in 1/2 cup heavy cream, whisking until fully incorporated.
    • Add 1 tablespoon Dijon mustard to sauce, whisking to combine; season with salt and pepper to taste.
    • Simmer sauce gently for 2-3 minutes until creamy and coats the back of a spoon.
    • Return perch fillets briefly to the saucepan with sauce, spooning sauce over to warm through.
    • Arrange perch fillets on serving plates, spoon creamy mustard sauce generously over each fillet.
    • Sprinkle chopped parsley on top for garnish (optional).
