    Ingredients

    • 4 perch fillets
    • 2 tablespoons butter
    • 2 tablespoons all-purpose flour
    • 1 cup chicken broth
    • 1/2 cup heavy cream
    • 1 tablespoon Dijon mustard
    • Salt and pepper, to taste
    • Chopped parsley, for garnish (optional)

    Method

    • To prepare Perch with Creamy Mustard Sauce, begin by seasoning the perch fillets with salt and pepper.
    • Heat a skillet over medium-high heat and add the butter.
    • Once the butter is melted, add the perch fillets and cook until they are golden brown and cooked through, about 3-4 minutes per side. Remove the perch from the skillet and set aside. 
    • In the same skillet, add the butter and flour and whisk together until combined. Slowly add the chicken broth, whisking continuously until the sauce thickens.
    • Add the cream and Dijon mustard and season with salt and pepper. Simmer until the sauce is thick and creamy, about 5 minutes. 
    • Return the cooked perch to the skillet and spoon the sauce over the top. 
    • Serve the perch with the creamy mustard sauce and garnish with chopped parsley, if desired.
