    • 4 (6-ounce) perch fillets
    • 1 teaspoon olive oil
    • Salt and freshly ground black pepper
    • 1/4 cup orange juice
    • 1 tablespoon honey
    • 1 teaspoon grated fresh ginger
    • 1/4 teaspoon ground cumin
    • 1/8 teaspoon ground cinnamon
    • 1/8 teaspoon ground allspice
    • 1/4 teaspoon orange zest
    • 2 tablespoons chopped fresh cilantro


    • Preheat oven to 350 degrees F.

    • Heat oil in a large ovenproof skillet over medium-high heat. Season perch fillets with salt and pepper. Add to skillet and cook for 2 minutes per side.

    • In a small bowl, combine orange juice, honey, ginger, cumin, cinnamon, allspice, and orange zest. Pour over perch fillets and bake for 10 minutes.

    • Remove from oven and sprinkle with cilantro. Serve hot.
