To prepare Perch with Pesto-Caper Sauce, season the perch fillets with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat.
Once the oil is hot, add the perch fillets and cook for 3-4 minutes per side, or until golden brown. Remove the fish from the skillet and set aside.
Add pesto, capers, white wine, and lemon juice to the same skillet. Stir to combine and bring to a simmer. Simmer for 3-4 minutes or until the sauce has thickened.
Return the cooked perch to the skillet and cook for an additional 2-3 minutes, or until the fish is cooked through.
Sprinkle with fresh parsley and serve warm. Enjoy!
