    Ingredients

    • 4 (6-ounce) perch fillets
    • 1/4 teaspoon salt
    • 1/4 teaspoon freshly ground black pepper
    • 2 tablespoons olive oil
    • 1/4 cup prepared pesto
    • 1/4 cup capers, drained
    • 1/4 cup dry white wine
    • 2 tablespoons freshly squeezed lemon juice
    • 2 tablespoons chopped fresh parsley leaves

    Method

    • To prepare Perch with Pesto-Caper Sauce, season the perch fillets with salt and pepper.

    • Heat the olive oil in a large skillet over medium-high heat.

    • Once the oil is hot, add the perch fillets and cook for 3-4 minutes per side, or until golden brown. Remove the fish from the skillet and set aside.

    • Add pesto, capers, white wine, and lemon juice to the same skillet. Stir to combine and bring to a simmer. Simmer for 3-4 minutes or until the sauce has thickened.

    • Return the cooked perch to the skillet and cook for an additional 2-3 minutes, or until the fish is cooked through.

    • Sprinkle with fresh parsley and serve warm. Enjoy!
