To prepare Perch with White Wine and Capers, begin by seasoning the perch fillets with salt and pepper. Then, coat the fillets in the flour.
Heat the olive oil and butter in a skillet over medium-high heat.
Once the butter has melted, add the perch fillets to the skillet and cook for 3-4 minutes per side, or until the fish is golden brown and cooked through.
Once the fish is cooked, add the white wine, capers, and lemon juice to the skillet and simmer for 2-3 minutes.
Finally, sprinkle the chopped parsley over the top and serve.
