    Ingredients

    • 4 (6-ounce) perch fillets
    • 1/4 cup all-purpose flour
    • Salt and freshly ground black pepper
    • 2 tablespoons olive oil
    • 2 tablespoons butter
    • 1/2 cup dry white wine
    • 2 tablespoons capers
    • 2 tablespoons freshly squeezed lemon juice
    • 2 tablespoons chopped fresh parsley

    Method

    • To prepare Perch with White Wine and Capers, begin by seasoning the perch fillets with salt and pepper. Then, coat the fillets in the flour. 

    • Heat the olive oil and butter in a skillet over medium-high heat.
