Heat the oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
Add the tomatoes, wine, salt, pepper and oregano. Simmer for 10 minutes.
Add the basil and Parmesan cheese, stirring to combine.
Add the mullet fillets to the sauce and simmer, covered, for 10 minutes or until the fish is cooked through.
Serve the fish with tomato-basil sauce. Enjoy!
