    Ingredients

    • 4 red snapper fillets
    • 1 head garlic, cloves separated and peeled
    • 4 Roma tomatoes, quartered
    • 2 tablespoons olive oil
    • 1 teaspoon dried oregano
    • Salt and freshly ground black pepper, to taste
    • 1/4 cup white wine
    • 1/4 cup chopped fresh parsley
    • Lemon wedges, for garnish

    Method

    • Step-by-Step Method: Red Snapper with Roasted Garlic and Tomatoes
    • Preheat oven to 200°C (400°F).
    • Separate garlic cloves and peel each clove.
    • Quarter the Roma tomatoes.
    • Place peeled garlic cloves and quartered tomatoes on a baking tray.
    • Drizzle garlic and tomatoes with 1 tablespoon of olive oil, sprinkle with half the dried oregano, and season lightly with salt and black pepper.
    • Roast garlic and tomatoes for 20-25 minutes, until garlic is tender and tomatoes start to caramelize.
    • Meanwhile, pat the red snapper fillets dry with a paper towel.
    • Season both sides of the snapper fillets with salt, black pepper, and the remaining dried oregano.
    • In a large oven-safe skillet or baking dish, drizzle 1 tablespoon olive oil and arrange the seasoned snapper fillets evenly.
    • Remove the roasted garlic and tomatoes from the oven, gently spooning them (and any roasting juices) around and over the snapper fillets.
    • Pour the white wine evenly into the dish, avoiding pouring directly on the fish to not wash off seasoning.
    • Bake the assembled dish in the oven for 10-12 minutes, or until the snapper is opaque and flakes easily with a fork.
    • Remove dish from oven and rest for 2 minutes to settle flavors.
    • Plate each snapper fillet with a generous topping of roasted tomatoes and garlic.
    • Sprinkle generously with chopped fresh parsley just before serving.
    • Serve with lemon wedges on the side for squeezing.
    • For presentation, consider a shallow white plate with the snapper centered, surrounded by rustic roasted tomatoes and garlic, a fresh parsley garnish, and a lemon wedge placed to one side.
