    Ingredients

    • 1 lb scallops
    • 2 tablespoons olive oil
    • 2 tablespoons butter
    • 2 cloves garlic, minced
    • 2 tablespoons capers
    • 1/4 cup dry white wine
    • 1/4 cup fresh lemon juice
    • 2 tablespoons chopped fresh parsley
    • Salt and pepper to taste

    Method

    • To prepare Scallops with Lemon Caper Sauce, heat the olive oil in a large skillet over medium-high heat. 
    • Add the scallops and cook for 2-3 minutes per side, or until lightly browned. Remove the scallops from the pan and set aside. 
    • Add the butter to the pan and melt. Add the garlic and capers and cook for 1 minute. 
    • Pour in the white wine and lemon juice and bring to a simmer. 
    • Add the parsley, salt, and pepper and stir to combine. 
    • Return the scallops to the pan and cook for an additional 2 minutes. 
    • Serve the scallops with the sauce over cooked rice or pasta.
