    Ingredients

    • 12 large scallops
    • 12 thin slices of prosciutto
    • 12 fresh sage leaves
    • 2 tablespoons olive oil
    • Salt and pepper, to taste

    Method

    • Pat scallops dry with a paper towel to remove surface moisture
    • Season both sides of the scallops lightly with salt and pepper
    • Place one sage leaf on the top of each scallop
    • Wrap each scallop and sage leaf tightly with a slice of prosciutto
    • Secure the prosciutto, if needed, with a toothpick or by gently pressing the seam
    • Preheat a large nonstick skillet over medium-high heat
    • Add 2 tablespoons olive oil to the skillet and heat until shimmering
    • Place wrapped scallops seam-side down in the pan, spacing them apart
    • Sear scallops for about 2 minutes per side until prosciutto is crisp and scallops are opaque
    • Remove scallops from the pan and allow to rest for 1-2 minutes before serving
    • For plating, arrange scallops in a line or circle on a warm plate for visual appeal
    • Optional: Garnish each scallop with a small fresh sage leaf for color
    • Serve immediately while hot, ideally with a fresh green salad or steamed vegetables as a side
