    Ingredients

    • 1 Sea Bream (or other white fish)
    • 2 tablespoons olive oil
    • Salt and pepper, to taste
    • 2 tablespoons pesto
    • 2 tablespoons white wine
    • 2 tablespoons lemon juice
    • 2 tablespoons butter
    • 2 cloves garlic, minced
    • 1 teaspoon freshly chopped parsley
    • Lemon wedges, for garnish (optional)

    Method

    • To begin, heat the olive oil in a large skillet over medium-high heat.
    • Season the fish with salt and pepper and add it to the skillet.
    • Cook for 3-4 minutes, flipping once, until the fish is golden and cooked through. Remove the fish from the skillet and set aside. 
    • In the same skillet, add the pesto, white wine, lemon juice, and butter. Stir to combine and cook until the butter is melted. 
    • Add the garlic and cook for an additional minute. 
    • Return the fish to the skillet and simmer for 2-3 minutes. 
    • Finally, stir in the parsley and season with salt and pepper, to taste.
