    Ingredients

    • 8 large sea scallops
    • 4 slices of bacon, diced
    • 2 cloves garlic, minced
    • 2 cups baby spinach
    • 2 tablespoons olive oil
    • Salt and pepper, to taste
    • 2 tablespoons freshly squeezed lemon juice

    Method

    • Begin by heating a large skillet over medium-high heat.
    • Add the bacon and cook until crispy. Remove the bacon from the pan and set aside.
    • Add the olive oil to the pan and then add the garlic and spinach. Sauté for 2-3 minutes, until the spinach is wilted.
    • Season the scallops with salt and pepper, then add them to the pan. Cook for 2-3 minutes on each side, until the scallops are golden brown and cooked through.
    • Add the bacon back to the pan and stir to combine.
    • Squeeze the lemon juice over the top of the scallops and spinach. 
    • Serve immediately.
