Start by preparing the shrimp. Peel and devein the shrimp, then season with salt and pepper.
Heat a large skillet over medium heat and add the shrimp. Cook for 2-3 minutes, or until the shrimp are cooked through.
Remove the shrimp from the skillet and set aside.
Wash and dry the lettuce leaves.
In a large bowl, combine the bell pepper, carrots, green onions, cilantro, hoisin sauce, sesame oil, and rice vinegar.
Add the cooked shrimp to the bowl and mix everything together.
To assemble the wraps, place a lettuce leaf on a plate and spoon the shrimp mixture onto the leaf.
Roll up the lettuce leaf and enjoy!
