Begin by prepping the Soft Shell Crab. Rinse the crabs in cold water and pat them dry with paper towels.
In a shallow bowl, mix together the flour, salt, and pepper.
In a separate bowl, whisk together the egg and milk.
Heat the oil in a large skillet over medium heat.
Dip the crabs in the egg and milk mixture, then dredge in the flour mixture.
Carefully place the crabs in the hot oil and fry for 4-5 minutes, or until golden brown.
Remove the crabs from the skillet and place on a paper towel-lined plate.
