    • 4 blue marlin steaks, about 150g each

    • 2 red bell peppers, thinly sliced
    • 4 stalks celery, cut diagonally
    • 350 mL Thai Yellow Curry Cooking Sauce

    Method

    • Pat blue marlin steaks dry with paper towels
    • Brush each steak lightly with olive oil on both sides

    • Simmer sauce and vegetables for 2–3 minutes to blend flavors
    • Nestle seared marlin steaks into the sauce, simmer gently for 1–2 minutes to rewarm
    • Taste and adjust seasoning if desired, bearing in mind the recipe’s low sodium profile
    • To plate, spoon vegetables and sauce onto plates, placing marlin steaks on top
    • Serve immediately, garnished with fresh herbs or lemon for brightness if available
