Next, add the whitebait and cook for a few minutes.
Once the whitebait is cooked, add the eggs and scramble them together.
Add the parsley, salt, and pepper, and stir to combine. Reduce the heat to low and cook until the eggs are set.
Finally, drizzle the olive oil over the omelette and serve.
