    Soft Roes with Mustard on Toast

    This recipe can be made with Shad roes. In the spring, shad travel to the rivers of the East Coast, where they grow to become the largest members of the herring family. Like salmon, it has a juicy texture and is big, chunky, and meaty.

    The smooth consistency of the herring roe is exquisitely enhanced by the toast’s crispiness, and a hint of heat from the mustard, making it the perfect starter or after-dinner treat.

    Ingredients

    • 1 package of herring milts/ soft roes (approximately 400g)
    • 2 teaspoons of mustard
    • 50g of butter
    • Just a pinch of salt

    Method

    • To make Tuna Fish Cakes, start by draining the canned tuna. 
    • While the rice is cooking, prepare the eel by grilling or frying it.
    • Put the tomato paste, olives, and butter into a blender or food processor and whizz until smooth.
    • Put the oats in the blender or food processor, slightly broken up.
