    • 1 lb large shrimp, peeled and deveined
    • 2 tablespoons olive oil
    • 2 cloves garlic, minced

    • 1 teaspoon dried thyme
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon cayenne pepper
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/4 cup white wine
    • 2 tablespoons freshly squeezed lemon juice
    • 2 tablespoons butter
    • 2 tablespoons chopped fresh parsley, for garnish
    • 1 lemon, cut into wedges, for garnish

    Method

    • Pat shrimp dry with paper towel to remove excess moisture
    • In a bowl, combine smoked paprika, dried oregano, dried thyme, garlic powder, onion powder, cayenne pepper, salt, and black pepper to make Cajun seasoning
    • Toss shrimp with half the Cajun seasoning until evenly coated
    • Mince garlic if not already done
    • Chop parsley and cut lemon into wedges for garnish
    • Heat 1 tablespoon olive oil in a large skillet over medium-high heat
    • When oil is shimmering, add shrimp in a single layer (work in batches if needed)
    • Sear shrimp for 1-2 minutes per side, until just opaque and lightly charred
    • Remove shrimp from skillet and set aside on a plate
    • Add remaining 1 tablespoon olive oil and minced garlic to the same skillet
    • Sauté garlic for 30 seconds until fragrant but not browned
    • Sprinkle in remaining Cajun seasoning and stir to bloom spices for 10 seconds
    • Pour in white wine and scrape up any browned bits from skillet
    • Simmer wine for 2 minutes to reduce slightly
    • Add lemon juice and stir well
    • Reduce heat to low and swirl in butter until melted and emulsified
    • Return cooked shrimp to skillet and toss gently to coat in sauce
    • Remove from heat, sprinkle with chopped parsley
    • Transfer shrimp and sauce to serving dish
    • Garnish with lemon wedges on the side
