Heat the butter in a large skillet over medium heat.
Add the garlic and shallots and cook until fragrant, about 2 minutes.
Add the Dover Sole fillets and cook until golden brown, about 4 minutes per side.
Add the white wine and cook for an additional 2 minutes.
Add the heavy cream, mushrooms, and thyme leaves and cook until the sauce is thickened, about 5 minutes.
Season with salt and pepper to taste.
Serve with fresh parsley.
