  • Grilled Sardines

    This is a great summer meal if you're in the mood for seafood. These sardines are seasoned simply with chilli and lemon, then popped on a griddle pan to finish cooking.

    Ingredients

    • 1 lemon, zested and juiced
    • 2 lemons, halved
    • 1 red chilli, deseeded and finely chopped
    • 1 garlic clove, crushed
    • 2 tablespoons olive oil
    • 8 sardines, gutted, about 100g each
    • A few drops of Tabasco
    • Mixed salad, to serve

    Method

    • Step-by-Step Method for Grilled Sardines
    • Combine lemon zest, lemon juice, chopped red chilli, crushed garlic, and olive oil in a small bowl to make a marinade
    • Place gutted sardines on a tray and drizzle them evenly with the marinade, ensuring each side is coated
    • Set aside to marinate for at least 15 minutes, turning the sardines once during this time
    • While sardines marinate, preheat the grill to high heat
    • Brush the grill grates with a little olive oil to help prevent sticking
    • Once hot, place lemon halves cut-side down on the grill and cook for 2–3 minutes until lightly caramelised, then remove and set aside
    • Place sardines directly on the hot grill and cook for 3–4 minutes on one side without moving them
    • Flip sardines carefully and grill for another 2–3 minutes until the flesh is opaque and skin is crisp
    • Remove sardines from the grill and drizzle with a few drops of Tabasco to taste
    • Arrange a bed of mixed salad on serving plates
    • Lay grilled sardines on top of the salad and serve with grilled lemon halves for squeezing over
    • Serve immediately while hot
