1. Preheat a grill or grill pan to medium-high heat.
2. Brush the sole fillets with olive oil and season with salt and pepper.
3. Place the fillets on the preheated grill and cook for 2-3 minutes per side.
4. In a small bowl, combine the lemon juice, parsley, chives, thyme, oregano, and butter.
5. When the sole is cooked through, transfer to a plate and top with the herbed butter. Serve immediately.
