    Ingredients

    • 4 (6-ounce) halibut fillets
    • 1/4 cup prepared pesto
    • 2 tablespoons olive oil
    • 1/2 teaspoon kosher salt
    • 1/4 teaspoon freshly ground black pepper
    • 2 large tomatoes, sliced
    • 2 tablespoons chopped fresh basil
    • 2 tablespoons freshly grated Parmesan cheese

    Method

    • To prepare Halibut with Pesto and Tomatoes, preheat the oven to 375 degrees Fahrenheit. 

    • Place the halibut fillets on a baking sheet lined with parchment paper. 

    • Spread the pesto over the fillets and drizzle with olive oil. Sprinkle with salt and pepper. 

    • Bake for 15 minutes or until the fish is cooked through. 

    • Top with the sliced tomatoes and sprinkle with the chopped basil and Parmesan cheese. Serve immediately.
