    Ingredients

    • 2 (1-1/4 pound) live lobsters
    • 4 tablespoons butter
    • 4 cloves garlic, minced
    • 1/4 cup white wine
    • 2 tablespoons freshly squeezed lemon juice
    • 2 tablespoons chopped fresh parsley
    • Salt and freshly ground black pepper, to taste
    • 2 tablespoons chopped fresh chives
    • 1/4 cup grated Parmesan cheese

    Method

    • Step-by-Step Method for Lobster Scampi
    • Bring a large pot of salted water to a rolling boil
    • Place the live lobsters in the boiling water and cook for 6–8 minutes until shells turn bright red
    • Remove lobsters from water and allow to cool slightly
    • While lobsters cool, melt 4 tablespoons of butter in a large sauté pan over medium heat
    • Add minced garlic to the butter and sauté for 1–2 minutes until fragrant
    • Pour white wine into the pan and simmer for 2–3 minutes to reduce slightly
    • Add freshly squeezed lemon juice to the pan; stir to incorporate
    • Remove lobster meat from cooled shells, extracting tail, claw, and knuckle meat in large chunks
    • Season the garlic-wine-butter sauce with salt and freshly ground black pepper to taste
    • Add lobster meat to the pan and cook gently for 2–3 minutes, turning to warm through without overcooking
    • Sprinkle chopped fresh parsley and chives into the pan; stir to distribute
    • Add grated Parmesan cheese and toss lightly to combine, letting it melt into the sauce
    • Taste sauce and adjust seasoning with additional salt, pepper, or lemon juice if needed
    • Transfer lobster and sauce to warm serving plates, arranging lobster pieces attractively
    • Spoon extra sauce over lobster
    • Garnish plates with additional parsley and chives as desired
    • Serve immediately, optionally with toasted bread or over cooked pasta if desired (not included in nutrition)
    • Wipe plate edges for clean presentation before serving
