    Ingredients

    • 2 (1-1/4 pound) live lobsters
    • 4 tablespoons butter
    • 4 cloves garlic, minced
    • 1/4 cup white wine
    • 2 tablespoons freshly squeezed lemon juice
    • 2 tablespoons chopped fresh parsley
    • Salt and freshly ground black pepper, to taste
    • 2 tablespoons chopped fresh chives
    • 1/4 cup grated Parmesan cheese

    Method

    • Begin by prepping the lobster. Place the lobster in a large pot of boiling salted water. Boil for 8 minutes, then remove from the heat.
    • Let the lobster cool, remove the shell and cut it into bite-sized pieces.
    • In a large skillet, melt the butter over medium heat.
    • Add the garlic and sauté for 1-2 minutes.
    • Add the white wine and bring to a simmer.
    • Add the lobster pieces and cook for 3-4 minutes.
    • Add the lemon juice, parsley, salt, and pepper. Cook for an additional 2 minutes.
    • Stir in the chives and Parmesan cheese. 
    • Serve with a side of pasta or crusty bread. Enjoy!
