    Lobster Scampi is a classic Italian-American dish favourite among seafood lovers. This dish is made with fresh lobster, butter, garlic, wine, lemon juice, parsley, salt, pepper, chives, and Parmesan cheese. This decadent dish will impress any dinner guest and is surprisingly easy to make.     Ingredients

    • 2 (1-1/4 pound) live lobsters
    • 4 tablespoons butter
    • 4 cloves garlic, minced
    • 1/4 cup white wine
    • 2 tablespoons freshly squeezed lemon juice
    • 2 tablespoons chopped fresh parsley
    • Salt and freshly ground black pepper, to taste
    • 2 tablespoons chopped fresh chives
    • 1/4 cup grated Parmesan cheese

    Method

    • To make Tuna Fish Cakes, start by draining the canned tuna. 
    • While the rice is cooking, prepare the eel by grilling or frying it.
    • Put the tomato paste, olives, and butter into a blender or food processor and whizz until smooth.
    • Put the oats in the blender or food processor, slightly broken up.
    • Coat the fillets with the butter mixture while grilling.
    • Heat a large skillet over medium-high heat and add the fish cakes.
    • Add the lemon juice, parsley, salt, and pepper. Cook for an additional 2 minutes.
    • Dip in the flour and coat each fishcake. Dip in the egg and then coat with crumbs. Repeat this process until you have 24 fishcakes. Chill the fish cakes for one hour.
    • Serve with a side of pasta or crusty bread. Enjoy!
