Begin by seasoning the mackerel fillets with salt and pepper.
Heat the butter in a skillet over medium-high heat.
Once the butter is melted and bubbling, add the mackerel fillets, skin-side down. Cook for 4-5 minutes until the skin is golden and crispy.
Flip the fillets and cook for an additional 2-3 minutes until the fish is cooked through. Remove the mackerel from the skillet and set aside.
Add the Dijon mustard, white wine, and lemon juice to the same skillet. Stir to combine and cook for 2-3 minutes, until the sauce is thick and creamy.
Add the cooked mackerel fillets to the sauce and gently stir to coat.
Sprinkle with chopped parsley and serve.
