Begin by heating a large skillet over medium-high heat.
Add the bacon and cook until crispy. Remove the bacon from the pan and set aside.
Add the olive oil to the pan and then add the garlic and spinach. Sauté for 2-3 minutes, until the spinach is wilted.
Season the scallops with salt and pepper, then add them to the pan. Cook for 2-3 minutes on each side, until the scallops are golden brown and cooked through.
Add the bacon back to the pan and stir to combine.
Squeeze the lemon juice over the top of the scallops and spinach.
Serve immediately.
