How to cook pollock
- Pan-fry: dredge in flour, fry in oil over medium-high for 3 minutes each side until opaque.
- Bake: 200°C for 12–15 minutes with butter and lemon.
- Beer-battered: 180°C for 5–6 minutes — the cheaper, sustainable chip-shop swap for cod.
- Fish pie or fishcakes: poach gently in milk, flake into mash or béchamel.
- Soup: Cullen-skink-style chowder with smoked bacon, leeks and potatoes.
Cook through fully — pollock’s flavour and texture both improve at fully-cooked. Pair with a crisp dry white or a cold pint of bitter for the battered version.
