    The garlic butter sauce is one of the basic components of French culinary cuisine. The sauce that is used on fish will add a punch of flavour to the fish.

    Ingredients

    • 12 oz. white fish fillet (you may use cod, halibut, or pollock fillet)
    • salt and ground black pepper to taste
    • 3 dashes of cayenne pepper
    • 2 tablespoons corn starch
    • 2 tablespoons cooking oil
    • lemon wedges
    • For the Garlic Butter Sauce
    • 1/2 stick melted salted butter
    • 3 cloves minced garlic
    • 1/2 tablespoon lemon juice
    • 1 tablespoon chopped parsley

    Method

    • Pat the white fish fillet completely dry using paper towels
    • Season both sides of the fillet with salt, black pepper, and three dashes of cayenne pepper
    • Evenly coat both sides of the seasoned fillet with corn starch
    • Preheat a non-stick skillet over medium-high heat
    • Add cooking oil to the skillet and ensure it coats the base evenly
    • Gently place the coated fish fillet into the hot skillet
    • Sear the fish undisturbed for 2–3 minutes until the underside is golden and crisp
    • Carefully flip the fillet and cook the other side for another 2–3 minutes until golden and the fish flakes easily
    • While the fish cooks, melt salted butter in a small saucepan over low heat
    • Add minced garlic to the melted butter and sauté for 30 seconds until fragrant
    • Stir lemon juice and chopped parsley into the garlic butter sauce
    • Once the fish is cooked, transfer it to a serving plate
    • Spoon the hot garlic butter sauce generously over the fish
    • Serve immediately with lemon wedges on the side
    • Optional: Garnish with extra chopped parsley for a fresh, vibrant finish
    • Pair with lightly steamed vegetables or plain rice for a balanced meal
