    The following recipe is for a quick and easy fish dish. You can use haddock, cod, pollock, sole, or flounder. Walleye would also work well!

    Ingredients

    • 2 pounds haddock fillets
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon paprika
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon ground black pepper
    • 1/2 teaspoon salt
    • 1/4 teaspoon cayenne pepper
    • 1 tablespoon butter
    • cooking spray
    • 1 lemon, cut into wedges

    Method

    • To make Tuna Fish Cakes, start by draining the canned tuna. 
    • While the rice is cooking, prepare the eel by grilling or frying it.
    • Put the tomato paste, olives, and butter into a blender or food processor and whizz until smooth.
    • Put the oats in the blender or food processor, slightly broken up.
    • Coat the fillets with the butter mixture while grilling.
    • Heat a large skillet over medium-high heat and add the fish cakes.
    • Place the fillets on the prepared cookie sheet. Turn to disperse the seasoning evenly.
    • Dip in the flour and coat each fishcake. Dip in the egg and then coat with crumbs. Repeat this process until you have 24 fishcakes. Chill the fish cakes for one hour.
    • During the final 5 minutes of baking, spread the butter over the fillets.
    • Remove the cookie sheet from the oven, and place the fillets and lemon wedges on serving plates.
    • Serving Suggestions: Lemon wedges add a nice flavor to this dish. Serve with crusty bread and a simple salad.
